BY KEISHA MILLIGAN small-business-mobileshop.jpg Barbara Claire, who resides on Faber’s Road, has been operating a mobile healthy food shop for the past 4 years. She had been a supervisor at the Radisson Fort George Hotel and Marina for 17 years before she decided to go on her own. She sat down this week with the Belize Times and told us why she started and a little about the mouth-watering foods she has available from Monday thru Thursdays. She just wanted some time for herself, Claire said, and knew that she had served the Radisson well. She loved cooking and dealing with people, though, and knew that she did not want to let that go, so she worked around that. She had her own vehicle, a nice van, and so she started making pastries and milky-way ideal and parked in front of KREM where she sold her items. In the evenings she would come over to New Road, where she would park over the other side from Smiling Meat Shop and sell the rest of her items. Later people began asking for other foods and as a woman who makes it her business to please her customers, she started cooking food. Now she even caters to special orders and special diets. So if you are a diabetic, you could make a call and she would prepare a healthy meal just to suit your appetite. Her preparation time is not that hectic because she pre-preps at night. She would do all her baking in the night and in the mornings at 7:00 she would get to the major cooking and preparation for the day. Her natural juices are also made at night. When you want a natural juice that looks like slush, Ms. B will always have it. From 10:30 a.m. – 1:00 p.m. she can be found outside of KREM’s gate and in the evenings from 3:00 p.m. – 5:30 p.m. she is out on New Road. One of the hardest things about being an entrepreneur is meeting people’s demands, Claire told us. One thing you always have to remember is that you are working for people, not for yourself. Ms. B, who can always be seen with a smile on her face, recently gave a small job to Dan Man, who walks around and sells her pastries. She can always reach out to someone who truly wants to help himself, said Ms. B. In the back of her white Chevrolet, you can find pastries, burgers, juices and your regular Belizean dishes.
